Toasted Pumpkin Seed Brittle

  1. In a 8-cup measure, combine sugar, cornsyrup, water and toasted pumpkin seeds. Microwave at high, uncovered, for 10-11 minuted or until medium-dark brown, without stirring.
  2. Stir in butter, baking soda, and vanilla.
  3. Immediately pour onto greased baking sheet, spreading out as much s possible and cool. The break into chunks.
  4. NOTE: To toast pumpkin seeds, toss 1 cup seeds (unrinsed but pulp removed) with 1 tablespoons vegetable oil and salt to taste.
  5. Spread in microwave-safe shallow glass dish and microwave at high for 5 minutes, stirring every minute. Then microwave at medium for 8 minutes, stirring every 2 minutes, or until crisp.
