Three-Cheese Zucchini Quiche (Rapid Fat Loss)

Ingredients
- 1 large zucchini
- 1⁄4 cup fat-free cheddar cheese, shredded
- 1⁄4 cup fat free mozzarella cheese, shredded
- 1⁄4 cup fat free feta cheese, crumbled
- 1 cup Egg Beaters egg substitute
- 1 tablespoon dried parsley
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon onion powder
- 1⁄8 teaspoon pepper
- 1⁄8 teaspoon chili powder
- 1⁄8 teaspoon garlic powder
Directions
- Preheat oven to 350°F.
- Shred the zucchini, either by hand with a grater or with a food processor.
- Mix the cheeses into the zucchini.
- Add seasonings and mix. Measurements above are guesses, I didn't measure mine, so use your judgement.
- Stir in egg substitute.
- Lightly coat pie pan or small baking dish with cooking spray.
- Pour mixture into pan.
- Bake for about 30 minutes, until set in the center and lightly browned on top.
