Thai Avocado Soup

Ingredients
- 2 medium avocados
- 1⁄2 cucumber, cut into 1/2 inch slices peel on
- 1 3⁄4 cups plain fat-free yogurt
- 1⁄2 lime, juice of
- 3 tablespoons chopped cilantro
- 1⁄2 teaspoon Tabasco sauce or 1⁄2 teaspoon chili paste
- 1⁄2 teaspoon finely chopped lemongrass
Directions
- Peel and pit the avocados, then place in a blender with the other ingredients and blend on high until very smooth (45 seconds-1 minute). Let the mixture rest in the fridge for at least two hours to blend flavours. Garnish with mint leaves and diced cucumber.
