Tabouleh Salad

Ingredients
- 2 cups bulgur wheat
- 1 cup fresh parsley, finely snipped
- 1⁄3 cup lemon juice
- 1⁄2 cup olive oil
- 1⁄2 cup green onion, sliced
- 2 teaspoons mint, snipped
- 2 tomatoes, chopped
- lettuce leaf
Directions
- Soak bulgar wheat in 2 cups hot water, lemon juice and oil for one hour. Stir in everything else, except the lettuce. Chill. Serve on lettuce-lined salad plates.
