Sun-Dried Tomato Dip

Yields: 2 1/4 cups
Ingredients
- 8 sun-dried tomatoes packed in oil
- 1⁄4 cup fresh parsley, chopped
- 1 1⁄2 tablespoons fresh chives, chopped
- 2 teaspoons fresh lemon juice
- 1 teaspoon red wine vinegar
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 cloves garlic, finely chopped
- 3⁄4 cup plain yogurt
- 3⁄4 cup sour cream
Directions
- Drain tomatoes but do not rinse.
- Place all ingredients except yogurt and sour cream in a food processor (or blender) and process until smooth.
- Remove tomato mixture from food processor and stir in yogurt and sour cream.
- Chill before serving.
