Stir-Fried Broccoli With Cashews and Peppers

Ingredients
- 1 head broccoli, cut into small florets
- 1 red pepper, sliced into thin strips
- 2 tablespoons olive oil
- 4 garlic cloves, crushed
- 1⁄2 cup cashew nuts, unsalted
Directions
- Heat the oil in a heavy nonstick pan over medium-high heat.
- Add the cashew nuts and stir over a medium heat for a minute, then add the garlic and broccoli and peppers.
- Stir-fry 3-4 minutes, or until just tender.
- Serve immediately.
