My mother is from Idaho,so she made these a lot when we were kids.I keep leftover mashed potatoes in the freezer in 1 cup portions.I just make sure they are thawed and at reoom temperature before I make these doughnuts. Show more

Directions

  1. Dissolve yeast in warm water.
  2. In large bowl,add salt,sugar,and shortening to milk,cool mixture to body temperature.
  3. Add potatoes,eggs,yeast mixture, and flour to milk mixture.
  4. Stir well.
  5. Roll dough on lightly floured surface to 1/2 inch thick.
  6. Cut with doughnut cutter.
  7. Let rise 1 hour.
  8. Fry in 350 degree oil.
  9. Drain on paper towels.
  10. combine powdered sugar,vanilla and enough warm water to make thin glaze.
  11. Dip doughnuts in glaze.
