Spinach Cheese Puffies

Yields: 3-4 dozen

Ingredients

  • 2  eggs
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 12 cup onion, finely chopped
  • 1  clove garlic, pressed
  • 2  ounces cheddar cheese, shredded
  • 13 cup  creamy  bleu cheese salad dressing
  • 2  tablespoons butter, melted
  • 1 (8 1/2ounce) package  corn muffin mix

Directions

  1. In a medium bowl, beat eggs and add remaining ingredients and mix well.
  2. Cover and refrigerate 1 hour or until mixture is firm enough to form into balls.
  3. Shape spinach mixture into 1 inch balls and place on buttered cookie sheets, cover and refrigerate or freeze until serving time.
  4. Bake refrigerated puffies on a greased cookie sheet at 350°F for 12-15 minutes, 18-20 minutes if frozen, and serve warm.
