Spicy Garden Chili

Ingredients
- 1 tablespoon olive oil
- 1 1⁄2 cups chopped onions
- 1 red bell pepper, chopped
- 1 cup chopped mushroom
- 3 tablespoons minced jalapeno peppers
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon coriander
- 2 tablespoons chopped fresh oregano
- 1 (16 ounce) can pinto beans
- 1 (16 ounce) can red beans
- 2 cups beef broth
- 28 ounces diced tomatoes
- 14 ounces tomato sauce
- 1 cup frozen corn
- 1⁄2 cup bulgur
Directions
- Heat oil in large Dutch oven over medium-high heat.
- Add first 7 ingredients(onion through to coriander) and saute 3 minutes, until onion is softened.
- Add remaining ingredients, reduce heat, and simmer 30 minutes.
- The longer the chili sits the thicker it will become due to the bulgur.
- Top individual bowls with sour cream and shredded cheese.
