Spicy Couscous Pockets (Microwave)

  1. Place reserved tomato juice in a 4-cup measure. Add enough water to measure 2/3 cup. Microwave on HIGH (100%) power setting until boiling, 1-1/2 to 2 minutes.
  2. Add couscous, chili powder, cumin and oregano and mix well. Cover and set aside.
  3. Combine beef, onion, green pepper and garlic in 3-quart casserole. Microwave on HIGH until beef is no longer pink, 5-7 minutes, stirring once. Drain.
  4. Add couscous mixture, tomatoes, raisins, salt & pepper. Mix well. Microwave on HIGH until hot, 7-9 minutes. Let stand 10 minutes.
  5. Spoon beef mixture into warmed pita pockets.
  6. Stir parsley into yogurt.
  7. Top each pita with yogurt mixture.
