Soycoli and Ginger Stir-Fry

Ingredients
- 125 g marinated tofu or 125 g smoked tofu, cut into triangles
- 200 g broccoli, cut into small florets
- 100 g shiitake mushrooms or 100 g chestnut mushrooms, diced
- 1 red onion, cut into wedges
- 120 ml vegetable stock
- 1 tablespoon soy sauce
- 1⁄8 teaspoon ginger powder
- 1 pinch salt (to taste)
- 1 tablespoon sesame seeds (optional)
Directions
- Turn the stove on high and heat a teaspoon of sesame oil in a wok or frying pan. Alternatively, if you are watching your fat intake, you could lightly spray the pan with cooking oil.
- Fry the onion and tofu for a couple of minutes before adding the mushrooms and mixing in the soy sauce. Allow to cook for 3minutes, stirring often.
- Add the broccoli florets and pour in the vegetable stock. Stir well and cover. Reduce to medium heat and leave it to cook for a couple of minutes or until the stock has mostly evaporated.
- Remove the lid, mix in the ginger and continue to cook for 30seconds. Turn off the stove and season to taste.
- Sprinkle over some sesame seeds and serve immediately.
