Sour Cherry Tabbouleh

Ingredients
- 1 1⁄2 cups boiling water
- 1 cup bulgur
- 1 small red onion, minced
- 1⁄4 cup parsley, minced
- 1⁄4 cup mint, minced
- 3⁄4 cup jarred sour cherry, chopped, with 3 t juice reserved
- 1⁄2 teaspoon fresh ground pepper
- 1⁄4 teaspoon salt
Directions
- Pour boiling water over bulghur in bowl; set aside 15 minutes.
- Fluff bulghur with fork.
- Add all ingredients and toss.
