SMASHED YUKON GOLD POTATOES

Ingredients
- 3 lbs yukon gold potatoes (Large Dice)
- 2 bay leaves
- 1 garlic clove (Peeled)
- 12 cups vegetable stock
- 2 tablespoons unsalted butter
- 2 tablespoons french cultured cream
- 2 ounces heavy cream (Tempered)
- 2 teaspoons white pepper
Directions
- Place potatoes, bay leaves, garlic and vegetable stock in a large stock pot. Bring too a full boil and reduce to a simmer for 6-8 minutes or until potatoes are tender.
- Drain potatoes and reserve some of the stock. Remove bay leaves and garlic.
- Place potatoes in a large bowl. Use a hand masher to mash potatoes. Add butter, French Cultured Cream, heavy cream and white pepper. Mash potatoes until they are smooth.
- Season with fine sea salt and white pepper to taste.
