Scd Gluten Free Sultana Raspberry Muffins

Ingredients
- 140 g butter
- 1⁄2 cup yogurt
- 4 eggs
- 2 teaspoons vanilla extract
- 1 1⁄2 teaspoons baking soda
- 1⁄2 teaspoon salt
- 2⁄3 cup honey
- 1⁄2 cup sultana
- 1⁄2 cup frozen raspberries
- 4 cups almond meal
Directions
- Heat oven to 180 C (350 F).
- Using a hand held blender, thoroughly mix together all ingredients other than fruit.
- Gently fold in fruit.
- Drop batter into muffin cases. Bake for 15 minutes. When done the edges will be a little brown and the knife inserted into them will come out clean.
