Sausages & Sweet Potato Mash

Ingredients

  • 4  pork sausages
  • 1  large onion, sliced
  • 2  sprays sunflower  cooking spray
  • 12  reduced salt  beef stock cube
  • 1  teaspoon tomato puree, double concentrate
  • 1  teaspoon  balsamic vinegar
  • 325  g sweet potatoes, chunks
  • 150  g broccoli florets
  • 100  g green beans
  • 2  tablespoons  fat free natural  fromage frais

Directions

  1. Preheat oven to 190C/170C fan/Gas 5. Put the sausages on a nonstick baking tray. Cook for 20-22 minutes.
  2. Put the onion in a pan with 2 sprays Frylight. Cook on low, covered, for 12 mins, stirring, until soft and slightly golden.
  3. Put half the onion in a bowl with 4tbsp water and blitz with a stick blender. Return to the rest of the onion.
  4. Crumble in the stock cube, add the puree, vinegar, and 100ml water. Bring to the boil, stirring, and simmer for 5 minute.
  5. While the onion is cooking, add the potato to a pan of boiling water, cover and simmer for 20-25 mins, until tender.
  6. Add the broccoli to another pan of boiling water, bring to the boil, cover and simmer for 2 minutes Add the beans and simmer for 2 minutes Drain.
  7. Mash the potato with the fromage frais and season with black pepper. Serve with the sausages and veg.
