Sausage and Cabbage in Slow Cooker

Ingredients
- 6 ounces chicken sausage with apples, thinly sliced
- 1 onion, finely chopped
- 8 cups of shredded cabbage 1 small head cabbage
- 2 medium potatoes, peeled and coarsely shredded
- 1 large carrot, coarsely shredded
- 3 garlic cloves, minced
- 8 cups chicken or 8 cups vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 tablespoon cider vinegar
Directions
- In a 4 - 6 quart slow cooker combine the sausage, onion, cabbage, potato, carrot, garlic, broth, thyme, bay leaf, vinegar and salt and pepper.
- Cover and cook on high for 4 to 6 hours or on low for 5 to 7 hours, until vegetables are tender.
- Discard the bay leave.
- Taste and adjust seasonings, adding more salt, pepper and/or vinegar as necessary.
