Salad Dressing Made with Zucchini

This is a surprisingly refreshing dressing on salads. Keeps for several days in the fridge. OOoops there goes another zucchini too

• Yields: 2 cups

Ingredients

• 2  cups  peeled zucchini, cut into small match sticks
• 1⁄2 cup low-fat plain yogurt
• 1⁄4 cup low-fat sour cream
• 1  teaspoon dill weed
•  salt
•  pepper

Directions

1. Mix all the ingredients together.
2. Store in glass jar or plastic container.
