Raita

Raita is an Indian salad, refreshing and low in calories. Two or three spoonfuls make an ample serving. I found this recipe in the Beltane Papers magazine. Show more

Yields: 1 bowlful

Ingredients

  • 1 12 cups plain yogurt
  • 1  cup  finely chopped raw  vegetables (can be radishes, cucumber, green pepper, green onions, tomatoes or beets)
  • 2  teaspoons  finely-minced fresh ginger
  • 1  dash cayenne
  • 1  dash curry powder

Directions

  1. Stir vegetables into yogurt and vegetables.
  2. Season with a dash of cayenne and curry powder.
