Raisin Chocolate Chip Bars

I found this recipe at VegKitchen.com. I like that it gives you the option of using your choice of 3 different types of healthful flours: kamut, whole wheat or spelt. It's also quite low-fat if you use low-fat milk & yogurt or go with the vegan option of applesauce & soymilk. Show more

  1. Preheat oven to 350°F and lightly oil a 8x13 pan.
  2. Mix the dry ingredients (flour, powder, soda, sugar) in a large bowl.
  3. In a seperate medium bowl mix together the wet ingredients (yogurt/applesauce, milk, oil and vanilla) Mix the dry ingredients with the wet until just combined.
  4. In a small bowl (or use your now-empty medium bowl that contained your wet ingredients) stir together chocolate chips, raisins and walnuts, if using.
  5. Pour half the batter into the pan, then sprinkle over the chocolate chip-raisin mixture.
  6. Pour the rest of the batter on top, smoothing with a spatula if needed.
  7. Bake for 25-30 minutes or until cake is golden and a toothpick comes out clean.
  8. For Vegan use applesauce and soy milk.
