Quick-Toss Fruit Slaw

Another recipe from my Publix Grocery "Greenwise" magazine. Easy to make and great for diabetics watching their carbohydrate intake. Use pre-package cole-slaw mix or shred your own. This might also be good using brocolli slaw mix. Show more

Serves: 10-12

Yields: 3/4 -cup servings

Ingredients

  • 4  cups  shredded cabbage, with carrot mix (pre-packaged coleslaw mix)
  • 1  cup  shredded red cabbage
  • 2  medium  organic apples, cored and coarsely chopped
  • 34 cup  dried fruit, mixed (cranberries, raisins, pineapple, etc)
  • 14 cup  chopped pecans, toasted
  • 1 (6 ounce) carton  organic low-fat vanilla yogurt
  • 18 teaspoon ground nutmeg

Directions

  1. Toss together cabbage mixture, red cabbage, apples, dried-fruit bits, and pecans in a large mixing bowl.
  2. For dressing, combine yogurt and nutmeg. Pour dressing over apple mixture; toss to coat.
  3. Serve immediately or cover and chill for up to 8 hours.
