Protein Power Balls

Yields: 12-14 balls
Ingredients
- 1 cup creamy peanut butter
- 1 cup corn flakes, plain
- 3⁄4 cup powdered soy protein concentrate
- 1⁄4 cup brown sugar, firmly packed
- 3⁄4 cup semi-sweet chocolate chips, finely chopped
- 1 cup sweetened coconut, toasted
Directions
- Combine all but coconut. Work with your hands to combine well.
- Scoop out spoonfuls and roll into golf ball sized balls.
- Roll in coconut to coat.
- Refrigerate at least one hour.
- Store in airtight container in fridge for up to one week.
