Protein Packed Vegetarian Soup

Ingredients
- 12 cups water
- 1 cup quinoa
- 1 cup split peas
- 1 cup brown lentils
- 1 cup red lentil
- 2 cups cooked short grain brown rice
- 2 red potatoes, diced
- 1 onion, diced
- 1 cup baby carrots, diced
- 2 tablespoons seasoning salt (to taste)
- any fresh I like fresh parsley or dried herbs, that you want to try I like fresh parsley
Directions
- soak quinoa for 30 minutes to eliminate any bitterness while heating water to a boil and chopping veggies.
- add split peas and brown lintels to water, return to a low boil
- 20 minutes later add all other ingredients.
- simmer till everything is tender maybe 30 more minutes, adding more water if necessary.
