Profound Black Bean Dip

I really don't know how to name recipes, so I used the first adjective that came to mind. I found a similar recipe online and have tweaked it for a few years. Just a simple bean dip to eat with chips. Warm and filling and good. I eat it as a snack or a meal. This makes quite a bit. If you're like me, you want to make as much as you can to get several meals or snacks out of one preparation. If you don't need that much, it's easily halved. It's also very flexible. Toss in peppers or red onions or salsa or bacon, if that suits your fancy. Show more

Serves: 12

Ingredients

  • 2 (16 ounce) cans  refried black beans
  • 1  cup sour cream
  • 8  green onions, chopped
  • 2  medium tomatoes, chopped
  • 1  bunch fresh cilantro, chopped (about 1 1/2 cups)
  • 2 12 cups  grated cheese (I like Italian blends of cheese for nearly everything mozzarella, Parmesan, Romano but that's hardly)
  •  tortilla chips

Directions

  1. Combine beans, sour cream, onions, tomatoes, cilantro and 1 1/2 cups of the cheese in an oven proof dish.
  2. Top with the remaining cheese.
  3. Use the back of a spoon to slightly squash the top cheese into the bean mix. (This is not absolutely necessary, but otherwise the cheese will slightly harden and will be more likely to break the chips dipped into it).
  4. Bake at 350F degrees for 20-30 minutes.
  5. Serve hot with chips.
