Potatoes With Red Bell Pepper and Mushrooms

Ingredients
- 4 tablespoons olive oil
- 1 medium onion (chopped)
- 1 red bell pepper (diced)
- 1⁄4 lb mushroom (sliced)
- 1 large boiling potato
- 1⁄2 cup white wine
- 1 cup chicken broth
- salt and pepper
Directions
- Cook onion, mushrooms and red pepper in olive oil, stirring until softened, about 5 minutes.
- Stir in potatoes, white wine and chicken broth and simmer covered for 20 minutes.
- Add salt and pepper to taste.
