Potatoes With Lime Mayonnaise

You can either broil or grill the potatoes, and then serve with the lime mayonnaise, which gives a wonderful tangy flavor. I suggest leaving the skins on the potatoes, however you prepare them. I would also experiment with other herbs besides thyme, such as rosemary or basil. Show more

  1. Cut the potatoes into 1/2 inch thick slices. Cook in a pan of boiling water for 5-7 minutes. They should still be very firm. Remove with a slotted spoon and drain thoroughly.
  2. Line a broiler pan with foil. Arrange the potato slices on top with no overlapping.
  3. Brush potatoes with melted butter and sprinkle with thyme. Sprinkle salt and pepper to taste.
  4. Cook in a preheated broiler at medium heat for 10 minutes, turning once.
  5. Meanwhile, make the lime mayonnaise. Thoroughly combine mayonnaise, lime juice, lime rind, garlic, paprika, salt and pepper to taste in a small bowl.
  6. Dust the hot potato slices with paprika and either serve with mayonnaise on the side, or spoon it on top before serving.
