Potato Soup

Ingredients
- 8 -10 potatoes, cut into chunks
- 1⁄2 small onion, chopped
- 1 (12 ounce) can evaporated milk
- 1 (16 ounce) bag broccoli florets
- 2 lbs smoked sausage, sliced and quartered
- 1 lb Velveeta cheese, cut into cubes
Directions
- In pot, cover potatoes and onion with water, bring to a boil and cook until almost done. Add broccoli and cook til tender. Drain off 1/2 of the water (or more if you like a thicker soup like we do). Remove from heat. Add evaporated milk, sausage and cheese. Stir until cheese is melted.
