Potato Curry for 1

Ingredients
- 1 teaspoon olive oil
- 1 potato, peeled and chopped
- 1 ounce mushroom, chopped
- 1⁄2 chili pepper, chopped
- 1 teaspoon curry powder
- 2 -3 tablespoons yoghurt
- salt and pepper
Directions
- Heat the oil in a pan and sauté the potato for 5-6 minutes.
- Add mushrooms, chilli and curry powder.
- Fry for a further few minutes.
- Stir in the yoghurt and cook for 2-5 minutes or until the potatoe is done.
- Season with salt and pepper.
