Potato and Leek Soup

Ingredients

  • 4  large potatoes, chopped
  • 2  leeks, thinly sliced
  • 2  celery, stalks chopped
  • 1  carrot, chopped
  • 2  prosciutto, slices chopped
  • 2  cups  vegetable stock
  •  cream, to serve

Directions

  1. Add all ingredients (except the cream) to a crockpot and cook on high for 3 hours.
  2. Use a hand processor, puree the soup untill smooth.
  3. Season to taste with salt and pepper.
  4. To serve, drizzle soup in bowls with fresh cream.
