Pistachio Brittle

Ingredients
- 1 1⁄2 cups shelled pistachios
- 1 cup sugar
- 1⁄2 cup light corn syrup
- 1⁄8 teaspoon salt
- 1 tablespoon vegan hard margarine
- 1 teaspoon vanilla extract
Directions
- In microwave safe bowl, combine pistachios, sugar, corn syrup and salt. Stir until well combined.
- Microwave on high until mixture is bubbly and nuts are starting to darken, 6-7 minutes.
- Stir in margarine and vanilla and microwave until mixture is turning a pale golden color, 2-3 minutes.
- Using oiled spatula, spread onto prepared baking sheet. Let cool completely.
- Break into pieces and store in an airtight container.
