Peanut Butter Hummus

Ingredients
- 15 ounces chickpeas, drained and rinsed
- 1⁄4 cup peanut butter
- 3 tablespoons lemon juice
- 1 large garlic clove, chopped
- 1 tablespoon parsley, minced
- 1⁄2 teaspoon salt
Directions
- Puree the chickpeas in a food processor.
- Add the peanut butter, lemon juice, garlic, parsley, and salt.
- Process until smooth and well blended.
- Add some water if a thinner consistency is desired.
- Transfer to a tightly covered container and refrigerate for at least one hour before serving.
- Serve chilled or at room temperature.
