Peachy Good Chicken

I wanted a fairly easy chicken recipe that could be cooked on the stove top so I came up with this one. It also used the toaster oven to keep the chicken warm enough while I cook up the pieces. Show more

  1. Cut up chicken or use an already cut up chicken or 8 chicken breast filets, sprinkle with salt and pepper.
  2. Melt coconut oil in a frying pan and add as many chicken pieces as will fit.
  3. When browned, put in a pan in the toaster oven to keep warm and finish cooking. Put the rest of the chicken pieces in the frying pan and repeat the process.
  4. Drain the peaches, save the juice, put in blender and puree. Add Tahini, garlic and Dijon mustard - blend. (Add the juice if you want a thinner sauce).
  5. Put chicken back into frying pan and pour peach sauce over the top. Cook for another 10 minutes or so.
