Peach and Blueberry Soup

Serves: 8-10

Ingredients

  • 8  cups  fresh peaches, peeled and sliced or 2  lbs  frozen peaches
  • 12 cup  orange juice
  • 12 cup  pineapple juice
  • 14 cup lime juice
  •  plain yogurt
  • 12 cup  whipping cream
  •  powdered sugar
  • 12-1  teaspoon  fresh gingerroot, grated
  • 12 cup fresh blueberries
  •  fresh mint sprig (optional)

Directions

  1. In a blender or food processor, combine peach slices, juices, yogurt and cream. Process or blend at high speed until mixture is smooth.
  2. Add powdered sugar and ginger root to taste.
  3. Cover and chill.
  4. Just before serving, gently stir in blueberries. Garnish each serving with mint sprigs and a dollop of yogurt.
