Pasta With Golden Corn Sauce

Ingredients
- 6 ears corn, kernels from
- 1 1⁄2 cups chicken broth
- 1 pinch saffron thread
- 1⁄2 cup heavy cream
- 1⁄4 lb smoked turkey or 1⁄4 lb ham, cut into thin strips
- 1 cup halved cherry tomatoes
- 1⁄4 cup chopped fresh basil
- salt and pepper
- 1 lb linguine
Directions
- Bring a large pot of salted water to a boil for the pasta.
- Combine the corn, chicken broth and saffron in a medium saucepan. Bring to a boil and simmer until corn is tender, about 1 minute.
- Transfer the corn mixture to a blender or food processor, add the cream and pulse to make a coarse puree. Return the mixture to the saucepan and add turkey, tomatoes and basil. Season with salt and pepper. Keep warm over low heat.
- Cook the pasta to just al dente. Drain.
- Combine the pasta with the sauce in a serving bowl, toss well, and serve immediately.
