Pasta With Cheese and Homemade Sauce

Yields: 1-3 medium size bowls
Ingredients
- 250 g dry pasta, bowties or 250 g penne
- 150 g mozzarella cheese, shredded
- 300 g tomatoes, pureed
- 1 teaspoon sugar
- 1 cup red wine
- 1 teaspoon salt
- 5 fresh basil leaves, chopped finely
- 1 garlic clove, crushed
- 2 sprigs parsley, chopped finely
- 1⁄2 teaspoon apple cider vinegar
Directions
- Cook pasta as directed on packaging. Once pasta has cooked, start to prepare the sauce.
- To prepare the sauce add tomato puree, basil, parsley, salt, sugar and red wine into a saucepan. Boil and reduce to simmer, 20 minutes.
- Put pasta in bowl and place sauce ontop.
- Garnish with the cheese and fresh basil leaves.
