Pasta Salad

Kind of just figure out what is in your pantry, and toss stuff in until it looks good, or sounds good. This came from Obesity Help. I have not tried this, just posting for safe keeping. Show more

Serves: 4-6

Ingredients

  • 2  cups  of dreamfield elbow pasta noodles
  • 1  cup  of oikos non-fat plain  Greek yogurt or 1  cup  fage non-fat plain  Greek yogurt
  • 3  tablespoons Miracle Whip, lite
  • 12 ounce  hidden valley  ranch fiesta dip mix (1/2 of 1 packet, they make other varieties if the Fiesta blend does not appeal to your tastes, also )
  • 12-34 cup fresh broccoli florets, halved and rinsed thoroughly (per your preference)
  • 12 fresh carrots, julienned or 12  thinly sliced carrot
  • 14 cup  jarred pimentos, drained and diced
  • Optional additions for different flavor profile

  •  hard-boiled egg, diced
  • 5 -7  slices  turkey bacon, cooked over medium heat until crispy, drained, then chopped into small pieces
  • 10 -20  turkey pepperoni, quartered
  •  fresh lime zest
  •  couple teaspoons fresh lime juice
  •  reduced fat sargento pepper jack cheese or   reduced fat shredded sharp cheddar cheese

Directions

  1. Cook macaroni as directed on package. Rinse with cold water until chilled.
  2. Add the next 3 ingredients, mix thoroughly. Add fresh veggies, cover and chill for at least 1 hour before serving. The longer this one sits, the better the flavors taste.
