Pasta Salad

Serves: 4-6
Ingredients
- 2 cups of dreamfield elbow pasta noodles
- 1 cup of oikos non-fat plain Greek yogurt or 1 cup fage non-fat plain Greek yogurt
- 3 tablespoons Miracle Whip, lite
- 1⁄2 ounce hidden valley ranch fiesta dip mix (1/2 of 1 packet, they make other varieties if the Fiesta blend does not appeal to your tastes, also )
- 1⁄2-3⁄4 cup fresh broccoli florets, halved and rinsed thoroughly (per your preference)
- 1⁄2 fresh carrots, julienned or 1⁄2 thinly sliced carrot
- 1⁄4 cup jarred pimentos, drained and diced
Optional additions for different flavor profile
- hard-boiled egg, diced
- 5 -7 slices turkey bacon, cooked over medium heat until crispy, drained, then chopped into small pieces
- 10 -20 turkey pepperoni, quartered
- fresh lime zest
- couple teaspoons fresh lime juice
- reduced fat sargento pepper jack cheese or reduced fat shredded sharp cheddar cheese
Directions
- Cook macaroni as directed on package. Rinse with cold water until chilled.
- Add the next 3 ingredients, mix thoroughly. Add fresh veggies, cover and chill for at least 1 hour before serving. The longer this one sits, the better the flavors taste.
