Oatmeal Pancakes

Yields: 15 pancakes
Ingredients
- 2 cups oatmeal
- 1 2⁄3 cups plain yogurt
- 1⁄3 cup milk
- 1⁄2 cup water
- 1⁄2 cup whole wheat flour
- 2 eggs, slightly beaten
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 2 tablespoons sugar
Directions
- Note: can substitute 2 cups buttermilk for the yogurt and milk.
- Original directions: Combine first 4 ingredients and refrigerate overnight. The next morning, add eggs and dry ingredients to oatmeal mixture.
- Alternate directions: Process dry oatmeal in food processor. Add rest of dry ingredients and process for 30 seconds. Mix all wet ingredients in large bowl and then add the dry processed ingredients. No need to make ahead and refrigerate.
- Preheat griddle well and spray with no stick spray. Use 1/3 cup of batter for each pancake.
