Not Your Grandmother’s Chicken Salad

Ingredients
- 1⁄3 cup plain nonfat yogurt
- 1⁄4 cup mayonnaise
- 2 tablespoons fresh lemon juice
- 2 teaspoons Dijon mustard
- 2 cups diced cooked chicken breasts
- 2 celery ribs, diced
- 1⁄2 Granny Smith apples, cored and diced
- 1⁄3 cup toasted chopped walnuts
- 3 tablespoons chopped fresh tarragon (optional)
- salt
- fresh ground black pepper
Directions
- In a large bowl, whisk together yogurt, mayonnaise, lemon juice, and mustard until blended.
- Add chicken, celery, apple, walnuts, and tarragon, if using, and mix thoroughly.
- Season to taste with salt and pepper.
- Cover and refrigerate for 1 hour or overnight, to blend flavors.
