Mushroom N' Cheese Pie

This is an old, found again, recipe from the archives. Haven't made it in years, but remember it being good. Show more

  1. Preheat oven to 325.
  2. Grease 9-inch pie plate.
  3. Combine Chex crumbs and oregano.
  4. Melt 5 1/2 tbs margarine in med-sized skillet.
  5. Add to Chex mixture. Mix until evenly coated.
  6. press onto bottom and sides of pie plate.
  7. Bake 8 minutes. Cool at least 5 minutes.
  8. Meanwhile, in same skillet, saute onion and mushrooms in remaining 1/2 tablespoon of margarine until liquid evaporates.
  9. Place in bottom of shell.
  10. Combine eggs, half and half, salt and pepper.
  11. Pour over mushrooms.
  12. Sprinkle cheese evenly over top.
  13. Bake 35 minutes or until knife inserted halfway between center and edge comes out clean.
  14. Allow to cool 10 minutes before serving.
