Mother's Rhubarb Crunch

Ingredients
- 1 cup flour
- 3⁄4 cup dry oatmeal
- 1 cup brown sugar
- 1⁄2 cup butter
- 1 teaspoon cinnamon
- 4 cups diced rhubarb
- 1 cup sugar
- 2 tablespoons cornstarch
- 1 cup water
- 1 teaspoon vanilla
Directions
- Mix the flour, oatmeal, brown sugar, butter and cinnamon until crumbly.
- Press 1/2 of the mixture into a greased 8x10x2 glass dish.
- Cover mixture with diced rhubarb.
- Combine the sugar, cornstarch, water and vanilla in a saucepan.
- Simmer until thickened.
- Pour over fruit.
- Cover with remaining crumb mixture.
- Bake 1 hour in 350°F.
- Serve warm with a scoop of vanilla ice cream.
