Mother's Rhubarb Crunch

Simple, delicious, old-fashioned. My mother always grew rhubarb in her yard. This was my favorite way to enjoy it. Show more

  1. Mix the flour, oatmeal, brown sugar, butter and cinnamon until crumbly.
  2. Press 1/2 of the mixture into a greased 8x10x2 glass dish.
  3. Cover mixture with diced rhubarb.
  4. Combine the sugar, cornstarch, water and vanilla in a saucepan.
  5. Simmer until thickened.
  6. Pour over fruit.
  7. Cover with remaining crumb mixture.
  8. Bake 1 hour in 350°F.
  9. Serve warm with a scoop of vanilla ice cream.
