Moi's Hoppin' Johns

My mom makes this dish and loves to tell the history behind it, which is it's an old southern dish. If a neighbor came by the lady of the house would say,"Hop on in, John" and eat with us, so this dish became known as "Hoppin John's." It's simple and tasty.

Ingredients

• 1⁄2 cup onion
• 1  small garlic clove
• 2  tablespoons margarine
• 1⁄2 cup rice
• 1 (17 ounce) can black-eyed peas

Directions

1. Saute onion and garlic; set aside.
2. Cook rice according to directions on box.
3. Combine peas, rice, and sauteed onion and garlic.
4. Heat and serve.
