Mixed Nut Brittle

  1. Grease a baking sheet with 1 1/2 t.
  2. of the butter; set aside.
  3. In a large saucepan, combine the sugar, water and corn syrup.
  4. Cook over medium heat until a candy thermometer reads 270F (soft-crack stage), stirring occasionally.
  5. Add the nuts; cook and stir until the mixture reaches 300F (hard crack stage).
  6. Remove from heat; stir in vanilla and remaining butter.
  7. Add baking soda and stir vigorously.
  8. Quickly pour onto prepared baking sheet.
  9. Spread with a buttered metal spatula to 1/4 inch thickness.
  10. Cool before breaking into pieces.
