Mint Chocolate Crackle Cookies

  1. In the top of a double boiler over simmering water, melt chocolate.
  2. When chocolate is liquid, lift pot out of water and beat in oil, sugar and mint extract.
  3. Add eggs, one at a time. Beat until thick and smooth.
  4. Sift flour, baking powder and salt into the chocolate mixture. Stir until blended.
  5. Cover dough and chill for at least 4 hours or as long as 2 days.
  6. Roll about 1 tsp of cookie dough at a time into a ball. Roll in icing sugar to coat generously. Set balls slightly apart on a greased cookie sheets.
  7. Bake at 350F for 10 to 12 minutes.
  8. Let cool on pan for about 30 seconds before transferring them to a rack to cool completely.
