Mimi's Harvest Muffins

Ingredients
- 1 1⁄2 cups flour
- 1⁄2 cup whole wheat flour
- 1 cup sugar
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon clove
- 2 cups shredded peeled apples
- 1⁄2 cup shredded carrot
- 1⁄2 cup coconut
- 1⁄2 cup raisins
- 1⁄2 cup chopped walnuts
- 2 eggs (beaten)
- 3⁄4 cup oil
- 1⁄4 cup milk
- 2 teaspoons vanilla
Directions
- In a large bowl combine and mix well the first 7 ingredients.
- Gently stir into the dry ingredients the apples, carrots, coconut, raisins, and walnuts.
- In a medium bowl combine and mix well the eggs, oil, milk, and vanilla.
- Gently stir into the rest of the batter stirring in one direction only.
- Fill paper line muffin tins 3/4 full.
- Bake 350 degrees for 20-25 minute.
- Remove and serve warm.
