Mimi's Apple Muffins

Ingredients
- 1 cup milk
- 1 tablespoon lemon juice
- 2 cups diced apples (skin on)
- 1 cup brown sugar
- 2⁄3 cup unsweetened applesauce
- 1 egg
- 1 teaspoon vanilla
- 2 1⁄2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla
Directions
- Combine milk and lemon juice. Let sit for at least five minutes.
- In a small bowl combine the dry ingredients.
- In a large bowl combine brown sugar, apple sauce, egg and vanilla.
- Alternately add the milk mixture and the dry ingredients mixing well.
- Stir in the apples.
- Fill greased or lined muffin tins 2/3 full. Bake in a 350 oven for 20-30 minutes or until toothpick inserted comes clean.
