Mayonnaise, Yogurt (No Oil)

Yields: 2 Cups
Ingredients
- 1 cup plain yogurt
- 2 tablespoons butter
- 4 tablespoons flour
- 1 cup milk
- 1 egg yolk
- 2 tablespoons lemon juice
- 1⁄2 teaspoon dry mustard
- 1⁄2 teaspoon salt
Directions
- Melt the butter in a skillet and stir in the flour.
- Add the milk all at once and stir over medium heat until thick.
- Remove from heat and beat in the egg yolk., lemon juice, mustard and salt.
- Stir in the yogurt and cool.
