Marcia's Potato Soup

Ingredients
- 1 medium yellow onion, chopped
- 2 -3 tablespoons butter
- 2 cups shredded carrots
- 3 cups frozen corn
- 1 -2 cup broccoli floret, cut into small pieces
- 3⁄4 cup water
- 3 (10 1/2ounce) cans cream of potato soup
- 5 cups milk (approximately- I just measure 3 cans of soup with milk)
- 2 cups cheddar cheese
- 1 cup monterey jack cheese
Directions
- Saute onion in butter, add shredded carrots, corn and broccoli.
- Add water and bring to a boil. Cover and simmer for 10 minutes (or until everything is soft).
- Add Potato Soup and milk.
- Heat until warm then add cheese.
- Enjoy!
