Low Low Fat Best Blueberry Muffins

Ingredients
- 1 cup dry oatmeal
- 1 cup skim milk
- 1⁄2 cup plain yogurt or 1⁄2 cup applesauce
- 1⁄2 cup sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1⁄2 cup whole wheat flour
- 1⁄2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1⁄2 cup blueberries
Directions
- Preheat oven to 375 degrees -- spray muffin pan.
- Combine oats and milk in a small bowl, let sit.
- Sift together the flours and all dry ingredients.
- Mix together the egg, sugar, applesauce/yogurt, and vanilla.
- Mix in the oats mixture into the egg mixture.
- Fold in the dry ingredients.
- Fold in blueberries
- Transfer into pan.
- Bake 15-20 minutes for muffin tin.
- Take out, ENJOY!
