  1. Preheat the oven to 350 degree Fahrenheit and line a baking sheet with parchment paper.
  2. Melt the butter, then mix in the coconut sugar, stevia, and vanilla extract.
  3. Whisk one egg and pour half into the sugar mixture.
  4. In a separate bowl, mix together the GF flour, baking soda, baking powder, salt, and cinnamon.
  5. Put the dry mixture into the wet mixture, then finally stir in the oats and chocolate.
  6. Dollop the cookie batter onto the baking sheet (10 cookies). Also the cookies will make a wet batter, so leave room in between each dollop.
  7. Bake for 12 minutes then allow to cool.
