Lighter Than Cooking Light Creamy Broccoli Cheese Casserole

I took a Cooking Light "lighten up recipe" and lightened it some more to suit my taste.

Yields: 12 1/2 cup servings

Ingredients

  • 4  cups broccoli, steamed until almost done
  • 1  small onion, cut into chunks
  • 2  teaspoons butter
  • 2  tablespoons flour
  • 14 teaspoon salt
  • 14 teaspoon pepper
  • 1 12 cups low-fat milk
  • 3  ounces  neufchatel cheese
  • 12  shredded cheddar cheese
  • 12 cup  breadcrumbs, seasoned

Directions

  1. Pre-heat oven to 375°F.
  2. Steam broccoli until almost done. Toss with onion chunks.
  3. Spread veggies into sprayed casserole dish.
  4. Melt butter in saucepan, adding salt and pepper.
  5. Whisk in flour until bubbly, then slowly add the milk whisking constantly.
  6. Heat until thickened, stirring constantly.
  7. Stir in the Neufchatel cheese, just until melted.
  8. Stir in grated cheese, remove from heat and continue to stir just until melted.
  9. Pour cheese sauce over veggies.
  10. Sprinkle breadcrumbs over all, spray crumbs with pan spray.
  11. Bake 25-30 minutes until broccoli is done and top is browning.
