Light Lemon Dill Potato Salad

Lighter than your average potato salad and quite refreshing.

  1. To cook potatoes: peel and cut into 1/2 inch pieces. Put into pot of water; before boiling drain water amd refill to one inch above potatoes and add 1 tsp salt. Bring to boil and simmer for about 5-8 mins until just barely tender. Drain and put immediately back into hot pot and cover. Let sit while you make the dressing.
  2. Mix other ingredients and toss with warm potatoes. Chill and serve.
